2 cups fresh or frozen corn kernels

1 cup all-purpose flour

1/2 cup cornmeal

1/2 cup fresh cilantro, finely chopped

2 green onions, finely sliced

2 large eggs

1/2 cup milk (dairy or non-dairy)

1 teaspoon baking powder

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and black pepper to taste

Vegetable oil for frying

Optional: Lime wedges for serving

Prepare the Mixture: In a large mixing bowl, combine the flour, cornmeal, baking powder, chili powder, cumin, salt, and black pepper. Mix well to combine.

    Incorporate Wet Ingredients: In a separate bowl, whisk together the eggs and milk. Add this mixture to the dry ingredients and stir until just combined (a few lumps are okay).

      Add Veggies: Gently fold in the corn kernels, chopped cilantro, and sliced green onions. Ensure everything is evenly distributed but avoid overmixing.

        Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom of the pan (about 1/4 inch deep). Heat the oil over medium-high heat until it shimmers.

          Fry the Fritters: For each fritter, drop about 2 tablespoons of the batter into the hot oil. Flatten them slightly with the back of a spatula. Cook for about 3-4 minutes on each side or until golden brown and crispy. Avoid overcrowding the pan; fry in batches if necessary.

            Drain Excess Oil: Once cooked, transfer the fritters to a paper towel-lined plate to absorb any excess oil. Repeat with the remaining batter.
