Cilantro Corn Fritters

2 cups fresh corn kernels (about 4 ears of corn, or you can use frozen)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 cup finely chopped fresh cilantro

1/4 cup finely chopped red bell pepper

1/4 cup green onions, thinly sliced

2 large eggs

1 teaspoon baking powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup milk (or non-dairy alternative)

Vegetable oil for frying

Lime wedges for serving

Prepare the Corn: If using fresh corn, shuck the ears and cut the kernels off the cob. If using frozen corn, thaw and drain it before use.

    Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, cornmeal, baking powder, cumin, smoked paprika, salt, and black pepper. Mix well to ensure all dry ingredients are evenly distributed.

      Combine Wet Ingredients: In another bowl, whisk together the eggs and milk until frothy. Add the chopped cilantro, red bell pepper, and green onions. Stir to combine.

        Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients, and fold gently until just combined. Then, fold in the corn kernels, being careful not to overmix.

          Heat Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. The oil is ready when a small drop of batter sizzles upon contact.

            Fry the Fritters: Using a tablespoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Flatten them slightly with the back of the spoon. Fry in batches, ensuring not to overcrowd the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

              Drain: Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
