Chocolate Chip Banana Oat Bars

2 ripe bananas, mashed

1 cup rolled oats

½ cup almond butter (or peanut butter)

¼ cup honey or maple syrup (adjust to taste)

1 tsp vanilla extract

½ tsp baking powder

¼ tsp salt

½ cup mini chocolate chips

¼ cup chopped nuts (optional, such as walnuts or pecans)

¼ tsp cinnamon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Combine Wet Ingredients: In a large mixing bowl, mash the ripe bananas until smooth. Then add the almond butter, honey (or maple syrup), and vanilla extract. Stir until well combined.

      Mix Dry Ingredients: In a separate bowl, combine the rolled oats, baking powder, salt, and cinnamon (if using). Mix well.

        Combine Mixtures: Gradually fold the dry mixture into the wet mixture until combined. Be careful not to over-mix. If desired, add in the chopped nuts and mini chocolate chips, reserving a few chips to sprinkle on top.

          Spread in Pan: Pour the mixture into the prepared baking pan and spread it out evenly. Use a spatula or the back of a spoon to press it down firmly. Sprinkle the reserved chocolate chips on top.

            Bake: Bake in the preheated oven for 20–25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.

              Cool and Cut: Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Lift the bars out using the parchment paper and let them cool completely on a wire rack. Once cooled, cut into squares or bars.
