8 rice paper wrappers

1 cup vermicelli noodles, cooked and cooled

1 cup shredded red cabbage

1 cup mixed bell peppers (red, yellow, and green), thinly sliced

1 cup cucumber, julienned

1 cup shredded carrots

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 avocado, sliced

ΒΌ cup chopped peanuts (for garnish)

For the Dipping Sauce:

3 tablespoons hoisin sauce

1 tablespoon creamy peanut butter

1 teaspoon rice vinegar

1 teaspoon sesame oil

1 teaspoon lime juice

Red pepper flakes (to taste)

Instructions
 

Prep the Ingredients:

    - Gather all the vegetables and herbs. Wash and dry them thoroughly.

      - Cook the vermicelli noodles according to package instructions, then rinse under cold water to stop the cooking process. Set aside.

        Prepare the Dipping Sauce:

          - In a small bowl, whisk together the hoisin sauce, peanut butter, rice vinegar, sesame oil, lime juice, and red pepper flakes. Adjust seasoning to your preference. Set aside.

            Soften the Rice Paper:

              - Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, until it becomes pliable. Lay it flat on a clean, damp kitchen towel.

                Assemble the Rolls:

                  - On the lower third of the softened rice paper, layer a small amount of vermicelli noodles, followed by a handful of red cabbage, bell peppers, cucumbers, carrots, mint, cilantro, and a slice of avocado.

                    - Be careful not to overfill; a little goes a long way!

                      Roll it Up:

                        - Starting from the lower edge, gently fold the rice paper over the fillings. Tuck in the sides and roll tightly towards the top to create a neat roll. Repeat the process with the remaining ingredients.

                          Serve:

                            - Cut each roll in half for easier eating, and arrange on a platter. Serve with the prepared dipping sauce and sprinkle with chopped peanuts for added crunch.
