Chili Roasted Chickpeas

1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for extra heat)

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: After draining and rinsing the chickpeas, spread them out on a clean kitchen towel. Pat them dry gently to remove excess moisture. This will help them become crispy while roasting.

      Season the Chickpeas: In a large mixing bowl, combine the dried chickpeas with olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Toss the chickpeas well to ensure they are evenly coated with the spices and oil.

        Roast Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper or a lightly greased baking pan. Make sure they have space in between to allow for even roasting.
