Chili Lime Chicken with Avocado Salsa

For the Chili Lime Chicken:

4 boneless, skinless chicken breasts

3 tablespoons olive oil

Juice and zest of 2 limes

2 tablespoons chili powder

1 tablespoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

For the Avocado Salsa:

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 jalapeño, deseeded and minced (optional for heat)

Juice of 1 lime

Salt to taste

Instructions
 

Marinate the Chicken: In a large mixing bowl, blend the olive oil, lime juice, lime zest, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper. Add the chicken breasts to the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes (or up to overnight for more flavor).

    Prepare the Avocado Salsa: In a separate bowl, combine the diced avocados, cherry tomatoes, red onion, jalapeño, lime juice, and salt. Gently mix to combine without mashing the avocados. Taste and adjust seasoning if necessary, then cover and set aside.
