Ingredients

1 sheet of puff pastry (thawed if frozen)

2 cups cherry tomatoes (halved)

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

2 tablespoons fresh basil (finely chopped)

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

1 egg (beaten, for egg wash)

Balsamic glaze (for drizzling)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to a rectangle about 1/8 inch thick. Cut it into smaller squares, approximately 4x4 inches each.

Shape the Tartlets: Place the squares on a baking sheet lined with parchment paper. Using a sharp knife, score a smaller square within each puff pastry square, about 1/2 inch from the edges. Be careful not to cut all the way through. This creates a border that will puff up beautifully when baked.

Mix the Filling: In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, chopped basil, olive oil, garlic powder, salt, and pepper. Mix well until all ingredients are blended into a creamy filling.

Assemble the Tartlets: Spoon the ricotta mixture into the center of each scored puff pastry square. Top the ricotta with halved cherry tomatoes, making sure to arrange them evenly across the filling.

Egg Wash: Brush the exposed border of the puff pastry with the beaten egg to give it a golden color when baked.

Bake in the Oven: Bake the tartlets in the preheated oven for about 20-25 minutes, or until the pastry is golden brown and puffed, and the tomatoes are slightly blistered.

Finish and Serve: Remove from the oven and allow to cool for a few minutes. Drizzle balsamic glaze over the tartlets for an added burst of flavor. Serve warm or at room temperature as a delightful appetizer or snack.
