For the Lasagna:

9-12 lasagna noodles (preferably no-boil)

2 cups fresh spinach, chopped

2 cups mushrooms, sliced (button or cremini)

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

16 oz ricotta cheese

1 large egg

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

3 cups marinara sauce (store-bought or homemade)

Instructions
 

Prepare the Vegetables:

    - In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

      - Add the sliced mushrooms and cook until they release their moisture and are tender, about 5-7 minutes.

        - Stir in the minced garlic, chopped spinach, oregano, basil, salt, and pepper. Cook for an additional 2-3 minutes until the spinach wilts. Remove from heat and set aside.

          Mix the Ricotta Filling:

            - In a mixing bowl, combine the ricotta cheese, egg, half of the Parmesan cheese, a pinch of salt and pepper. Mix until well combined.

              Assemble the Lasagna:

                - Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom.

                  - Place a layer of lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles followed by half of the sautéed vegetable mixture, and a layer of mozzarella cheese.

                    - Repeat the layers: marinara sauce, noodles, remaining ricotta mixture, the rest of the sautéed vegetables, and another layer of mozzarella.

                      - Top with a final layer of noodles, the remaining marinara sauce, and sprinkle with remaining mozzarella and Parmesan cheese.

                        Bake:

                          - Cover the baking dish with aluminum foil (avoid touching the cheese) and bake for 25 minutes.

                            - Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                              Let It Rest:

                                - Remove the lasagna from the oven and let it sit for about 10-15 minutes before slicing. This will help the layers set.

                                  Serve:

                                    - Carefully cut the lasagna into squares and serve warm, garnished with fresh basil if desired.
