Ingredients

1 lb ground turkey

1 cup ranch dressing

1 cup shredded cheddar cheese

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 cup frozen corn

1 cup diced tomatoes (canned or fresh)

1 packet ranch seasoning mix

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1/2 cup chopped green onions (for garnish)

Optional: sliced jalapeños for a spicy kick

Instructions

Preheat the oven: Begin by preheating your oven to 375°F (190°C).

Cook ground turkey: In a large skillet over medium heat, add the ground turkey. Cook until browned and thoroughly cooked, about 5-7 minutes. Make sure to break up the turkey into small pieces as it cooks.

Combine ingredients: Once the turkey is cooked, lower the heat and add the ranch dressing, ranch seasoning mix, garlic powder, onion powder, salt, and pepper. Stir well to ensure that the turkey is fully coated in the seasoning.

Add remaining ingredients: Stir in the cooked rice, black beans, corn, and diced tomatoes into the turkey mixture. Mix everything together until evenly combined.

Layer in casserole dish: Transfer the mixture to a greased 9x13 inch casserole dish. Spread it out evenly and sprinkle the shredded cheddar cheese generously on top.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes until the cheese is melted and bubbly, and the edges begin to turn golden brown.

Garnish and serve: Remove the casserole from the oven and let it cool for a few minutes. Top with chopped green onions and optional jalapeños. Serve warm and enjoy!
