Cheesy One-Pan Chicken and Broccoli Bake

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets, fresh or frozen

1 cup uncooked elbow macaroni

2 cups chicken broth

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

½ cup grated Parmesan cheese (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sauté Chicken: In a large, oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken pieces, seasoning them with salt, pepper, garlic powder, onion powder, and paprika. Cook for about 5-7 minutes, until the chicken is browned on all sides and fully cooked through. Remove the chicken and set aside.

      Combine Ingredients: In the same skillet, add the uncooked macaroni and chicken broth. Bring the mixture to a simmer, then reduce the heat to medium-low.

        Add Broccoli and Milk: Stir in the broccoli florets and milk. Combine everything well and let it cook for another 3-4 minutes, until the macaroni starts to soften.

          Cheesy Goodness: Lower the heat and stir in the shredded cheddar and mozzarella cheese until melted and combined. Return the cooked chicken to the skillet and mix everything together. Adjust seasoning if needed.

            Bake It: If using a skillet that is not oven-safe, transfer the mixture into a baking dish. Sprinkle the grated Parmesan cheese on top (if using). Place the skillet or baking dish in the preheated oven and bake for 15-20 minutes, or until bubbly and golden on top.

              Serve: Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
