Cheesy Ham and Broccoli Breakfast Bake

2 cups fresh broccoli florets

1 cup diced ham (smoked or cooked)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

6 large eggs

1/2 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup diced potatoes (can use frozen hash browns)

1 tablespoon olive oil

Optional: chopped fresh parsley for garnish

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Broccoli: In a medium pot, blanch the broccoli florets in boiling water for about 2-3 minutes until they are bright green. Drain and set aside.

      Sauté Potatoes: In a large skillet, heat olive oil over medium heat. Add the diced potatoes (or hash browns) and cook for about 5-7 minutes, stirring occasionally, until they are golden and tender.

        Combine Ingredients: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined. Stir in the diced ham, blanched broccoli, shredded cheddar, and half of the mozzarella cheese.

          Assemble the Bake: In a greased 9x13 inch baking dish, spread the sautéed potatoes evenly on the bottom. Pour the egg and cheese mixture over the top, ensuring it is evenly distributed. Sprinkle the remaining mozzarella cheese on top.

            Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes or until the eggs are set and the top is golden and bubbly.

              Cool and Serve: Allow the bake to cool for about 5 minutes before slicing. Garnish with chopped fresh parsley if desired and serve warm.
