1 pound ground beef

1 cup long-grain white rice

2 cups beef broth (or water)

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (10 oz) diced tomatoes with green chilies, undrained

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

1 1/2 cups shredded cheddar cheese

1 teaspoon olive oil

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper, sautéing until softened (about 5 minutes). Add the minced garlic and ground beef. Cook until the beef is brown and no longer pink, breaking it apart with a spoon (approximately 7-10 minutes). Drain excess fat if necessary.

    Add Spices: Sprinkle in the ground cumin, paprika, salt, and pepper. Stir to evenly coat the beef mixture with the spices.

      Incorporate Rice and Liquids: Stir in the rice and cook for about 1 minute. Add the beef broth (or water) and the can of diced tomatoes with green chilies. Stir everything together and bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

          Add Cheese: After the rice is cooked, remove the skillet from heat. Sprinkle the shredded cheddar cheese over the top. Cover again for a few minutes until the cheese melts.
