Cheesy Balsamic Casserole

2 cups cooked pasta (penne or rotini work great)

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 bell pepper, diced (any color)

1 cup fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the minced garlic, diced zucchini, and bell pepper. Sauté for about 5 minutes or until the vegetables begin to soften.

      Mix Ingredients: In a large mixing bowl, combine the cooked pasta, sautéed vegetables, halved cherry tomatoes, and chopped spinach.

        Prepare Cheese Mixture: In a separate bowl, mix the ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, balsamic vinegar, dried basil, and oregano. Season with salt and pepper.

          Combine: Pour the cheese mixture into the pasta and vegetable mixture. Stir until everything is evenly combined.

            Assemble Casserole: Transfer the combined mixture into a greased 9x13-inch baking dish. Spread evenly and sprinkle the remaining mozzarella and Parmesan cheese on top.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly and the top is golden brown.
