Ingredients

4 large eggs

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional)

Fresh herbs for garnish (e.g., chives or parsley)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Spinach: In a skillet over medium heat, add olive oil. Once hot, add the chopped spinach and sauté for about 2-3 minutes until wilted. Remove from heat and let cool slightly.

Mix the Cheese and Cream: In a large mixing bowl, combine the heavy cream, mozzarella cheese, Parmesan cheese, garlic powder, salt, black pepper, and red pepper flakes (if using). Stir in the sautéed spinach until well mixed.

Create the Nests: Lightly grease a muffin tray with cooking spray or oil. Spoon the spinach and cheese mixture into each cup of the muffin tray, filling them about halfway. Using a spoon, create a small well in the center of each nest for the eggs.

Crack the Eggs: Carefully crack one egg into each well, taking care not to break the yolk. Season the tops with a little extra salt and pepper.

Bake: Place the muffin tray in the preheated oven and bake for 15-20 minutes, or until the egg whites are set but the yolks are still slightly runny (adjust baking time for firmer yolks).

Cool and Serve: Once baked, remove from the oven and let cool for a few minutes. Use a spoon to gently lift the nests out of the tray. Garnish with fresh herbs before serving. Enjoy warm!
