1 large zucchini, sliced into 1/4-inch rounds

1 large red bell pepper, cut into wide strips

1 medium red onion, sliced into thick rings

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon smoked paprika

4 slices of sourdough bread

4 tablespoons hummus (store-bought or homemade)

Fresh arugula or spinach leaves, for topping

Balsamic glaze, for drizzling (optional)

Prepare the Veggies: In a large bowl, combine the zucchini, red bell pepper, red onion, and cherry tomatoes. Drizzle with olive oil and sprinkle with smoked paprika, salt, and pepper. Toss until evenly coated.

    Char the Veggies: Preheat a grill or a grill pan over medium-high heat. Once hot, place the seasoned veggies in a single layer. Grill for about 5-7 minutes per side, or until they have nice char marks and are tender. Remove from heat and set aside.
