Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded sharp cheddar cheese

1/2 cup diced salami

1/2 cup diced pepperoni

1/4 cup sliced black olives

1/4 cup chopped fresh rosemary (or 1 tablespoon dried rosemary)

1/2 cup buttermilk

1/3 cup vegetable oil

2 large eggs

1 teaspoon Dijon mustard

Optional: Parmesan cheese for topping

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper until well combined.

Add Cheeses and Meats: Fold in the sharp cheddar cheese, diced salami, pepperoni, black olives, and chopped rosemary into the dry mixture until evenly distributed.

Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and Dijon mustard until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

Fill Muffin Cups: Divide the batter evenly among the muffin cups, filling each about 3/4 full. If desired, sprinkle some grated Parmesan cheese on top for extra flavor.

Bake: Bake in the preheated oven for about 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.

Cool: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy warm or at room temperature. These muffins pair wonderfully with a light salad, or can be enjoyed as a savory snack on their own.
