Ingredients

1 medium green cabbage, chopped

1 lb ground beef (or ground turkey for a lighter option)

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, grated

1 cup diced tomatoes (canned or fresh)

2 tablespoons tomato paste

1 teaspoon paprika

1 teaspoon cumin

1 teaspoon black pepper

1 tablespoon olive oil

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions

Prep the Cabbage: Begin by removing the core from the cabbage, then chop it into bite-sized pieces and set it aside.

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it's translucent. Then, add the minced garlic and cook for an additional minute.

Add Ground Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if needed.

Incorporate Vegetables: Stir in the grated carrots and chopped cabbage, and mix well until the cabbage begins to wilt, about 3-5 minutes.

Season the Mixture: Once the vegetables are slightly tender, add the diced tomatoes, tomato paste, paprika, cumin, black pepper, and salt. Stir everything to combine and allow it to simmer for about 10 minutes, or until the cabbage is tender and the flavors meld together.

Final Touches: Taste and adjust seasoning if necessary. Remove the skillet from heat and garnish with fresh parsley before serving.

Serve: Enjoy your Cabbage Delight Skillet hot, either on its own or with a side of rice, quinoa, or crusty bread.
