1/2 cup unsalted butter (1 stick)

5 cloves of garlic, minced

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon paprika (smoked or sweet, based on preference)

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

2 tablespoons fresh parsley, chopped

1/2 cup grated Parmesan cheese (optional, for an extra cheesy touch)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Prep the Potatoes: Rinse each potato under cold water to remove any dirt. Pat them dry with a clean kitchen towel.

      Score the Potatoes: Place one potato on a cutting board. Using a sharp knife, make cuts every 1/4 inch down the potato, being careful not to cut all the way through—stop about 1/2 inch from the bottom. This will help the potato cook evenly and create beautiful “hasselback” slices. Repeat with the remaining potatoes.

        Make the Garlic Herb Butter: In a small saucepan, melt the unsalted butter over low heat. Add minced garlic, sea salt, black pepper, paprika, and the chopped fresh herbs. Stir well to combine and let it simmer for about 2-3 minutes, allowing the flavors to meld.

          Baste the Potatoes: Place the scored potatoes on a baking sheet lined with parchment paper. Carefully brush or spoon the garlic herb butter mixture over each potato, ensuring some seeps into the cuts. Reserve a little of the butter mixture for basting during baking.
