Buttery Caramel Pecan Bread Pudding

8 cups day-old bread, cut into 1-inch cubes (brioche or challah works great)

1 cup pecans, roughly chopped

4 large eggs

2 cups whole milk

1 cup heavy cream

1 cup granulated sugar

1/2 cup brown sugar, packed

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 stick (1/2 cup) unsalted butter, melted

1 cup caramel sauce (store-bought or homemade)

Extra caramel sauce for drizzling (optional)

Whipped cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.

    Prepare the Bread: In a large mixing bowl, combine the cubed bread and chopped pecans. Toss gently to mix and set aside.

      Make the Custard: In another bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, brown sugar, vanilla extract, cinnamon, and salt until well combined. Pour in the melted butter and whisk until smooth.

        Combine: Pour the custard mixture over the bread and pecan mixture, ensuring all the bread is drenched. Let it sit for about 15-20 minutes to allow the bread to soak up the custard.

          Bake: Transfer the mixture to the prepared baking dish, spreading it evenly. Bake in the preheated oven for 35-45 minutes, or until the bread pudding is set in the center and golden brown on top.

            Add Caramel: About 5 minutes before the baking time is up, drizzle half of the caramel sauce over the top of the bread pudding. Allow it to finish baking, which will create an irresistible caramel layer on top.

              Cool: Once baked, remove from the oven and let it cool for about 10-15 minutes. This will help it to set further.
