4 medium-sized sweet potatoes

1 pound boneless, skinless chicken breasts

1 cup buffalo sauce (homemade or store-bought)

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup Greek yogurt or sour cream (for topping)

1/4 cup chopped green onions (for garnish)

Optional: fresh cilantro or parsley for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly and poke several holes in each with a fork. This helps steam escape while they cook. Wrap them in aluminum foil and place them on a baking sheet. Bake for 45-60 minutes, or until tender when pierced with a fork.

      Cook the Chicken: While the sweet potatoes are baking, heat olive oil in a skillet over medium heat. Season the chicken breasts with garlic powder, onion powder, salt, and pepper. Sear the chicken for about 5-7 minutes on each side until cooked through (internal temperature of 165°F / 75°C).

        Shred the Chicken: Remove the chicken from the skillet and let it rest for a few minutes. Once cooled slightly, shred the chicken using two forks. In a mixing bowl, combine the shredded chicken with buffalo sauce. Stir until well coated.

          Prepare the Potatoes: Once the sweet potatoes are cooked, remove them from the oven and let them cool for about 5 minutes. Carefully unwrap the foil, then slice each sweet potato down the middle, creating a pocket. Gently fluff the insides with a fork.
