2 cups rolled oats

1 cup unsweetened almond milk (or milk of choice)

1/2 cup honey or maple syrup

1/3 cup coconut oil, melted

1/2 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 1/2 cups fresh or frozen blueberries

1/4 cup chopped nuts (walnuts or pecans), optional

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir until well-mixed.

      Combine Wet Ingredients: In another bowl, whisk together the almond milk, melted coconut oil, honey (or maple syrup), and vanilla extract until fully combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries and nuts (if using), being careful not to smash the blueberries.

          Bake the Mixture: Transfer the mixture to the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until the squares are golden brown around the edges.

            Cool and Slice: Once baked, remove from oven and let the squares cool in the pan for at least 10 minutes. Use the parchment overhang to lift the squares out of the pan and transfer them to a wire rack to cool completely before slicing into squares.

              Serve and Enjoy: Serve warm or at room temperature. These squares can be stored in an airtight container in the fridge for up to a week or frozen for longer storage.
