Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Make the Cookie Dough:

      - In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).

        - Beat in the egg and vanilla extract until fully combined.

          - In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

            - Gradually add the dry ingredients to the wet mixture and mix until just combined. Do not overmix.

              Prepare the Blueberry Cheesecake Swirl:

                - In another bowl, beat the softened cream cheese with the granulated sugar, flour, and vanilla extract until smooth.

                  - Gently fold in the blueberries, being careful not to crush them.

                    Combine the Mixtures:

                      - Scoop out about 1-2 tablespoons of cookie dough and flatten it slightly in your palm.

                        - Add a teaspoon of the blueberry cheesecake mixture in the center, then fold the cookie dough around it to completely seal the filling inside.

                          - Place the filled cookie on the prepared baking sheet, spacing them about 2 inches apart.

                            Swirl Effect:

                              - Take a toothpick or skewer, and gently swirl the tops of the cookies to create a marbled effect, making sure not to disturb the filling too much.

                                Bake:

                                  - Bake in the preheated oven for 12-15 minutes, or until the edges are slightly golden and the centers are set.

                                    - Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

                                      Enjoy:

                                        - Serve your delicious Blueberry Cheesecake Swirl Cookies warm or at room temperature, and enjoy with a glass of milk or your favorite beverage!
