Beef Lettuce Wraps with Mango Glaze

1 lb ground beef (preferably lean)

1 tablespoon vegetable oil

3 cloves garlic, minced

1 small onion, finely chopped

1 carrot, shredded

1 red bell pepper, finely diced

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1 teaspoon freshly grated ginger

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

8 large lettuce leaves (iceberg or butter lettuce work well)

1 ripe mango, pureed

2 tablespoons lime juice

1 tablespoon honey

1 tablespoon chopped fresh cilantro (for garnish)

1 tablespoon chopped peanuts (for garnish)

Instructions
 

Prepare the Mango Glaze: In a small saucepan, combine the pureed mango, lime juice, and honey. Heat over medium-low heat until warmed through, and slightly thickened, about 5-7 minutes. Stir occasionally, then set aside.

    Cook the Beef: In a large skillet, heat the vegetable oil over medium-high heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent and fragrant, about 3-4 minutes.

      Add Vegetables: Stir in the shredded carrot and diced bell pepper, cooking for an additional 2-3 minutes until they begin to soften.

        Incorporate Beef and Sauces: Add the ground beef to the skillet, breaking it up with a spatula. Cook until the beef is browned and fully cooked, about 5-7 minutes. Drain any excess fat.

          Flavor It Up: Mix in the soy sauce, oyster sauce, hoisin sauce, sesame oil, grated ginger, red pepper flakes, and season with salt and pepper to taste. Allow everything to cook together for another 2 minutes, ensuring the beef is well-coated with the sauces.

            Assemble the Wraps: To serve, spoon a generous amount of the beef mixture into the center of each lettuce leaf. Drizzle with the mango glaze.

              Garnish: Top each wrap with chopped cilantro and peanuts for added flavor and crunch.

                Serve: Offer additional mango glaze on the side for those who desire extra sweetness.
