1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup fresh basil leaves, finely chopped

Zest of 2 limes

1/4 cup lime juice (about 2 limes)

2 tablespoons olive oil

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon red pepper flakes (optional, for heat)

8 to 10 wooden or metal skewers

Instructions
 

Prepare the Marinade: In a medium bowl, combine the finely chopped basil, lime zest, lime juice, olive oil, honey, minced garlic, salt, black pepper, and red pepper flakes (if using). Whisk together until fully combined.

    Marinate the Chicken: Place the cubed chicken in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure all pieces are evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to 4 hours for more flavor).

      Preheat the Grill: If you’re using wooden skewers, soak them in water for about 30 minutes to prevent them from burning. Preheat your grill to medium-high heat (about 400°F / 200°C).

        Skewer the Chicken: Remove the chicken from the marinade (discard any leftover marinade). Thread the chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

          Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

            Rest and Serve: Once cooked, remove the skewers from the grill and let them rest for about 5 minutes. Serve warm with lime wedges and your favorite dipping sauce.
