3 medium zucchinis

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

2 large eggs

½ cup all-purpose flour

Olive oil spray (for drizzling)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Rinse and dry the zucchinis. Cut them into fries by slicing them lengthwise into quarters, then cut each quarter into strips. Aim for uniform sizes for even cooking.

      Set Up Breading Station: In one bowl, place the all-purpose flour. In a second bowl, whisk the eggs until well-beaten. In a third bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.

        Bread the Zucchini: Dip each zucchini fry first in the flour, ensuring it's fully coated. Shake off any excess. Next, dip it into the egg mixture, and finally coat it in the breadcrumb mixture, pressing gently to ensure the crumbs stick. Place the breaded fries on the prepared baking sheet.
