1 cup canned pumpkin puree

1/2 cup vegetable oil

1 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

Optional: 1/4 cup chopped walnuts or pecans

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.

    Mix Wet Ingredients: In a large bowl, combine the canned pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk until smooth and well-combined.

      Sift Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt.

        Combine Mixtures: Gradually fold the dry ingredients into the wet mixture using a spatula, being careful not to overmix. The batter should be slightly lumpy—this is perfect for muffins!
