Baked Peach Cobbler Oatmeal Cups

2 cups old-fashioned rolled oats

1 teaspoon baking powder

1 teaspoon cinnamon

1/4 teaspoon salt

2 cups almond milk (or milk of choice)

1/4 cup maple syrup (or honey)

1 teaspoon pure vanilla extract

1 1/2 cups fresh peaches, diced (or canned peaches, drained)

1/2 cup chopped pecans (optional)

1/4 cup brown sugar (for topping)

1/2 teaspoon cinnamon (for topping)

Optional: whipped cream or yogurt for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin or line it with parchment paper liners.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir well to ensure even distribution.

      Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, maple syrup, and vanilla extract until well blended.

        Combine Mixtures: Pour the wet ingredients into the dry mixture. Stir until the oats are evenly coated. Then gently fold in the diced peaches and chopped pecans, if using.

          Fill Muffin Tin: Scoop the oatmeal mixture into the prepared muffin tin, filling each cup about 3/4 full.

            Prepare Topping: In a small bowl, mix together the brown sugar and the additional 1/2 teaspoon of cinnamon. Sprinkle this mixture over the oatmeal cups for a sweet, crispy topping.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the oatmeal cups are golden brown and set in the center.
