Baked Chili Lime Chicken Tenders

1 lb (450g) chicken tenderloins

1/4 cup fresh lime juice (about 2 limes)

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for extra heat)

1 cup panko breadcrumbs

1/4 cup grated Parmesan cheese (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together lime juice, olive oil, honey, chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, black pepper, and cayenne pepper if using. Add the chicken tenderloins, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

    Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

      Prepare the Breading: In a separate bowl, combine the panko breadcrumbs and Parmesan cheese, if using. Mix well to incorporate the cheese evenly into the breadcrumbs.

        Coat the Chicken: Remove the chicken tenders from the marinade, letting the excess drip off. Dredge each tender in the panko mixture, pressing down gently to ensure an even coating. Place the coated tenders on the prepared baking sheet, spaced apart for even cooking.
