Bacon & Potato Breakfast Casserole

8 slices of thick-cut bacon, chopped

4 large russet potatoes, peeled and diced into small cubes

1 medium onion, finely chopped

1 bell pepper (red or green), diced

1 cup shredded sharp cheddar cheese

1 cup milk

4 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh chives or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the bacon drippings in the skillet.

      Sauté Vegetables: In the same skillet with the bacon drippings, add the diced potatoes, chopped onion, and bell pepper. Drizzle with olive oil and season with salt, pepper, garlic powder, onion powder, and paprika. Cook, stirring occasionally, for about 10-15 minutes or until the potatoes are tender and golden brown.

        Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk. Add a pinch of salt and pepper.

          Combine Ingredients: Once the potatoes and vegetables are cooked, remove them from the heat. Gently fold in the crispy bacon and half of the cheddar cheese into the potato mixture. Pour this mixture into a greased 9x13 inch baking dish.

            Add Egg Mixture: Pour the egg and milk mixture over the potato mixture in the baking dish, ensuring everything is evenly distributed. Sprinkle the remaining cheese on top.

              Bake the Casserole: Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the egg is set and the top is golden and bubbly.
