2 cups cooked jasmine rice (preferably day-old)

1 cup mixed vegetables (carrots, peas, corn)

2 large eggs

1 cup cooked chicken, diced (or tofu for a vegetarian option)

3 green onions, sliced

3 tablespoons soy sauce

1 tablespoon oyster sauce (or vegetarian substitute)

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

Optional: Sesame seeds for garnish

Prep the Rice: If you don’t have day-old rice, cook jasmine rice according to package instructions and spread it out on a baking sheet to cool. This prevents it from getting mushy when fried.

    Scramble the Eggs: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Crack the eggs into the pan and scramble until fully cooked. Remove from the pan and set aside.

      Sauté the Aromatics: In the same skillet, add the remaining sesame oil. Add the minced garlic and grated ginger, stirring until fragrant, about 30 seconds.

        Add Veggies and Chicken: Toss in the mixed vegetables and cooked chicken (or tofu) into the pan. Stir-fry for about 3-4 minutes until the vegetables are tender.

          Fry the Rice: Add the cooked jasmine rice to the skillet. Break up any clumps with a spatula. Pour in the soy sauce and oyster sauce, mixing well until the rice is thoroughly coated. Stir-fry for about 5-7 minutes until everything is heated through.

            Combine Everything: Add the scrambled eggs back to the skillet along with the sliced green onions. Season with salt and pepper to taste. Stir everything until evenly mixed and heated.
