8 oz rotini pasta (or your favorite pasta)

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 cup red bell pepper, diced

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1 cup fresh corn (canned or grilled)

1/4 cup fresh cilantro, chopped (optional)

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp dried dill

Salt and pepper, to taste

1 cup ranch dressing (store-bought or homemade)

Juice of 1 lime

Cook the Pasta: Begin by cooking the rotini pasta according to package instructions. Once done, drain and rinse under cold water to cool it down. Let it sit in a large mixing bowl.

    Prepare the Veggies: While the pasta is cooling, prepare the vegetables. Dice the avocados and add them to the bowl with the pasta. Also, add the cherry tomatoes, red bell pepper, cucumber, red onion, and fresh corn. If you like cilantro, throw that in as well!

      Create the Dressing: In a separate bowl, combine the ranch dressing, garlic powder, onion powder, dill, salt, black pepper, and lime juice. Mix until well blended.

        Combine: Pour the dressing over the pasta and veggies. Gently toss everything together until the pasta and vegetables are well coated with the dressing.

          Chill: Cover the salad with plastic wrap or transfer it to an airtight container and place it in the refrigerator for at least 30 minutes to allow the flavors to meld together.
