Avocado Corn Black Bean Salad

2 ripe avocados, diced

1 cup canned black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 small red onion, finely chopped

1 bell pepper (any color), diced

1 jalapeño, seeded and finely chopped (optional, for heat)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon cumin

Salt and pepper, to taste

Prepare Ingredients: Start by dicing the avocados, chopping the red onion, bell pepper, cilantro, and jalapeño. If you're using fresh corn, cut the kernels off the cob. If you're using frozen corn, thaw it first.

    Mix the Beans and Corn: In a large mixing bowl, combine the rinsed black beans and corn kernels. Stir well to mix them together.

      Add Vegetables: Gently fold in the diced avocado, chopped red onion, bell pepper, and jalapeño into the black bean and corn mixture. Be careful not to mash the avocado.

        Make the Dressing: In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until well combined.

          Combine Everything: Pour the dressing over the salad mixture. Add the chopped cilantro, and then gently toss all the ingredients together until everything is evenly coated with the dressing.
