2 medium apples (such as Granny Smith or Honeycrisp), peeled and diced

1 tablespoon lemon juice

2 tablespoons brown sugar

1 teaspoon cinnamon

¼ teaspoon nutmeg

1 tablespoon butter

Maple syrup

Whipped cream (optional)

Instructions
 

Prepare the Apple Filling:

    - In a medium saucepan, melt the butter over medium heat. Add the diced apples and lemon juice, tossing to coat.

      - Sprinkle the brown sugar, cinnamon, and nutmeg over the apples. Cook for about 5-7 minutes until the apples are tender and the mixture is bubbling. Remove from heat and set aside.

        Make the Pancake Batter:

          - In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

            - In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until combined.

              - Pour the wet ingredients into the dry ingredients and stir until just combined. Some lumps are okay; do not over-mix.

                Cook the Pancakes:

                  - Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

                    - Pour about ¼ cup of batter into the skillet for each pancake. Top each pancake with a spoonful of the apple filling before flipping.
