2 cups rolled oats

1 cup finely chopped apples (about 2 medium apples)

1/2 cup almond butter (or any nut/seed butter of choice)

1/3 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup chopped nuts (walnuts, almonds, or pecans)

1/4 cup dried fruit (raisins, cranberries, or apricots)

Optional: 1/4 cup chocolate chips for extra sweetness

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, and salt. Stir well to distribute the spices evenly.

      Prepare Wet Ingredients: In another bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth and creamy.

        Combine Mixtures: Pour the wet ingredients into the dry oat mixture. Stir until well combined. Fold in the chopped apples, nuts, dried fruit, and chocolate chips if using.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish. Use a spatula or your hands to press down the mixture firmly, ensuring it's evenly distributed and tightly packed.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set.

              Cool and Cut: Allow the bars to cool in the baking dish for about 10-15 minutes, then lift them out using the parchment edges. Let them cool completely on a wire rack before cutting into squares or bars.

                Store: Store the bars in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
