1 cup rolled oats

1 cup whole wheat flour

1/2 cup brown sugar (packed)

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1 cup unsweetened applesauce

1/2 cup milk (can be dairy or non-dairy)

1/4 cup vegetable oil or melted coconut oil

1 large egg

1 teaspoon vanilla extract

1 cup diced apples (about 2 medium apples)

For the Crunchy Topping:

1/3 cup rolled oats

1/4 cup brown sugar (packed)

1/4 teaspoon cinnamon

3 tablespoons cold butter (cubed)

A pinch of salt

1/4 cup chopped nuts (e.g., walnuts or pecans) - optional

Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    Muffin Mixture: In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir until well mixed.

      Wet Ingredients: In another bowl, whisk together the applesauce, milk, vegetable oil, egg, and vanilla extract until smooth.
