1 tsp baking powder

½ tsp salt

1 tsp ground cinnamon

½ tsp nutmeg (optional)

½ cup plain Greek yogurt

½ cup granulated sugar

¼ cup brown sugar, packed

2 large eggs

1 tsp vanilla extract

½ cup vegetable oil or melted coconut oil

1 large apple, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

½ cup walnuts or pecans, chopped (optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and set aside.

    Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

      Combine wet ingredients: In a large bowl, whisk together the Greek yogurt, granulated sugar, brown sugar, eggs, and vanilla extract until well combined. Slowly drizzle in the oil and whisk until fully incorporated.
