For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon ground cinnamon

For the cheesecake layer:

16 oz cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ cup sour cream

For the apple cinnamon topping:

2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp recommended)

¼ cup brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

Prepare the crust: Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Mix until well combined. Press the mixture firmly into the bottom of a greased 9x9-inch baking pan. Bake for 10 minutes, then set aside to cool.

    Make the cheesecake filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add sugar while mixing. Add in eggs one at a time, mixing well after each addition. Stir in vanilla extract, ground cinnamon, and sour cream until all ingredients are fully combined and smooth.

      Prepare the apple topping: In a medium bowl, toss the diced apples with brown sugar, cinnamon, and lemon juice until coated evenly.

        Assemble the bars: Pour the cheesecake mixture over the cooled crust and spread it evenly. Sprinkle the apple mixture over the cheesecake layer, distributing the apples evenly.

          Bake: Bake in the preheated oven for 35-40 minutes or until the cheesecake is set and the edges are lightly golden. The center might still be slightly jiggly; it will firm up as it cools.

            Cool and chill: Allow the bars to cool at room temperature for about an hour. Once cooled, refrigerate for at least 4 hours, or overnight, for the best texture and flavor.

              Serve: Once chilled, cut the cheesecake into bars and serve. Optionally, dust with powdered sugar or serve with whipped cream for an extra touch!
