Air Fryer Sweet Corn Patties

1 cup sweet corn (fresh or frozen)

1/2 cup mashed potatoes (cooked and cooled)

1/4 cup finely chopped onions

1/4 cup finely chopped bell pepper (any color)

1/4 teaspoon garlic powder

1/4 teaspoon cumin powder

1/4 teaspoon paprika

1/4 teaspoon black pepper

Salt to taste

1/4 cup all-purpose flour (or chickpea flour for gluten-free)

1/4 cup breadcrumbs (for coating)

Prepare the Base Mixture: If using frozen sweet corn, thaw it out completely. In a mixing bowl, combine the sweet corn, mashed potatoes, chopped onions, and bell pepper. Mix until well combined.

    Season the Mixture: Add garlic powder, cumin powder, paprika, black pepper, and salt into the mixture. Mix thoroughly until the spices are evenly dispersed.

      Form the Patties: Add the all-purpose flour to the mixture and mix until everything is nicely combined. If the mixture is too sticky, sprinkle a little more flour until it can hold its shape. Divide the mixture into small portions and shape them into round patties, about 1/2 inch thick.

        Coat the Patties: Place the breadcrumbs in a shallow dish. Dredge each patty in breadcrumbs, making sure both sides are well coated for extra crunch.

          Preheat the Air Fryer: Preheat your air fryer at 375°F (190°C) for about 3-5 minutes.

            Air Fry the Patties: Lightly spray the air fryer basket with cooking spray. Carefully place the patties in a single layer in the basket. Spray the tops of the patties with cooking spray as well.

              Cook: Air fry the patties at 375°F (190°C) for 12-15 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy on both sides.

                Serve: Once done, remove the patties from the air fryer and let them cool for a minute before serving. Serve them with your favorite dipping sauce or a fresh salsa for an added kick!
