Prep the Zucchini: Start by washing the zucchinis thoroughly. Slice them into 1/4 inch coins and place them on a paper towel. Lightly sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture. Pat them dry with another paper towel.

    Set Up Breading Stations: In a shallow bowl, whisk together the eggs. In another shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and black pepper.
