2 medium zucchinis

2 fresh jalapeños

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

Prep the Zucchini: Wash and dry the zucchinis. Cut them into ½-inch thick rounds and set them aside.

    Prepare the Jalapeños: Slice the jalapeños in half lengthwise and remove the seeds if you prefer a milder flavor. Cut them into strips or rounds, about the same thickness as the zucchini.

      Make the Breading Mixture: In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix thoroughly.

        Prepare the Egg Wash: In another bowl, beat the eggs until well mixed.

          Coat the Vegetables: Dip each zucchini round and jalapeño piece into the egg wash, allowing any excess to drip off. Then, coat them in the breadcrumb mixture, pressing lightly to adhere. Place them on a plate until all pieces are coated.

            Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

              Air Fry the Rounds: Spray the air fryer basket with cooking spray to prevent sticking. Arrange the coated zucchini rounds and jalapeño pieces in a single layer in the basket, ensuring they do not overlap. You may need to do this in batches.

                Cook: Air fry for 10-12 minutes, flipping halfway through, until they are golden brown and crispy. Spray lightly with cooking spray during cooking for extra crispiness.
