1 lb fresh salmon fillet, skin removed

1/4 cup teriyaki sauce (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1/2 teaspoon garlic powder

1/2 teaspoon ginger powder

1 tablespoon olive oil

1/4 cup cornstarch (for extra crispiness)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes (about 1-inch pieces). Pat the pieces dry with paper towels to reduce moisture, which helps achieve crispiness.

    Marinate the Salmon: In a bowl, combine the teriyaki sauce, soy sauce, honey, sesame oil, garlic powder, and ginger powder. Add the salmon cubes to the bowl and gently toss to coat each piece evenly. Let them marinate for at least 15 minutes for flavor infusion.

      Coat with Cornstarch: After marinating, remove the salmon bites from the marinade (reserve the marinade for later) and sprinkle the cornstarch over the salmon cubes. Toss gently until all pieces are evenly coated with cornstarch.

        Preheat the Air Fryer: Preheat your air fryer to 390°F (200°C) for about 5 minutes.

          Air Fry the Salmon Bites: Lightly brush the air fryer basket with olive oil to prevent sticking. Place the salmon bites in a single layer in the basket, making sure not to overcrowd. You may need to do this in batches depending on your air fryer size.

            Cook the Salmon: Air fry the salmon bites for approximately 8-10 minutes, shaking the basket halfway through, until the bites are golden brown and crispy. The internal temperature should reach 145°F (63°C).

              Prepare the Sauce: While the salmon is cooking, pour the reserved marinade into a saucepan and bring it to a simmer over medium heat. Cook for about 5 minutes until the sauce thickens slightly.

                Serve: Once the salmon bites are done, remove them from the air fryer and drizzle with the thickened teriyaki sauce. Garnish with chopped green onions and sesame seeds.
