Ingredients

1 lb (450g) fresh salmon fillet, skin removed

1/4 cup teriyaki sauce (store-bought or homemade)

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 tablespoon soy sauce (low sodium preferred)

1 teaspoon garlic powder

1 teaspoon ginger powder (or fresh grated ginger)

1/2 teaspoon black pepper

1/4 cup cornstarch (for crispiness)

2 tablespoons sesame seeds (optional, for garnish)

2-3 green onions, finely chopped (for garnish)

Instructions

Prepare the Salmon: Cut the fresh salmon fillet into bite-sized cubes, approximately 1 inch thick. Pat them dry with a paper towel to remove any excess moisture.

Marinate the Salmon: In a mixing bowl, combine the teriyaki sauce, honey, sesame oil, soy sauce, garlic powder, ginger powder, and black pepper. Mix well to create the marinade. Add the salmon cubes to the bowl, ensuring they are fully coated with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

Coat the Salmon Bites: After marinating, remove the salmon from the refrigerator. Sprinkle cornstarch over the salmon bites, tossing gently until each piece is evenly coated. This will give the salmon a crispy texture when cooked.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Cook the Salmon Bites: Once preheated, arrange the salmon bites in a single layer in the air fryer basket, making sure they are not overcrowded. You may need to do this in batches. Cook the salmon for 8-10 minutes, shaking the basket halfway through the cooking time. The salmon should be golden and crispy on the outside and cooked through on the inside.

Garnish and Serve: Once cooked, carefully remove the salmon bites from the air fryer. Optionally, sprinkle with sesame seeds and chopped green onions for added flavor and presentation.

Enjoy: Serve your crispy teriyaki salmon bites immediately with steamed rice, in lettuce wraps, or as an appetizer with extra teriyaki sauce for dipping.
