Ingredients

1 lb fresh salmon fillet, skin removed

1/4 cup low-sodium soy sauce

2 tbsp honey or maple syrup

1 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1 tsp ginger, grated

1 tsp cornstarch

1/4 tsp black pepper

2 tbsp green onions, chopped (for garnish)

1 tbsp sesame seeds (for garnish)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, cornstarch, and black pepper until well combined.

Marinate the Salmon: Cut the salmon fillet into bite-sized pieces (about 1-inch cubes) and place them into the marinade. Toss gently to coat all pieces with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for a more intense flavor.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

Air Fry the Salmon Bites: Remove the salmon from the marinade and let any excess sauce drip off. Place the salmon bites in a single layer in the air fryer basket (you may need to do this in batches). Air fry for 8-10 minutes, or until the salmon is crispy on the outside and cooked through. Shake the basket halfway through the cooking time for even results.

Garnish and Serve: Once cooked, transfer the crispy teriyaki salmon bites to a serving platter. Garnish with chopped green onions and sprinkle sesame seeds on top. Serve immediately with additional soy sauce for dipping if desired.
