Air Fryer Crispy Teriyaki Salmon Bites

1 lb (450g) fresh salmon fillet, skin removed

1/4 cup soy sauce

2 tbsp honey or maple syrup

1 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1 tsp fresh ginger, grated

1/2 tsp red pepper flakes (optional for heat)

1/2 cup panko breadcrumbs

2 tbsp cornstarch

Sesame seeds for garnish

Chopped green onions for garnish

Instructions
 

Prepare the Marinade: In a bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes. This will be your teriyaki marinade.

    Marinate the Salmon: Cut the salmon fillet into bite-sized cubes (about 1-inch pieces). Place the salmon cubes in the bowl of marinade, ensuring they are evenly coated. Cover and marinate in the refrigerator for at least 30 minutes to 1 hour, allowing the flavors to penetrate the fish.

      Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

        Prepare the Coating: In a shallow dish, combine the panko breadcrumbs and cornstarch, mixing well to ensure an evenly distributed coating.

          Coat the Salmon: Remove the marinated salmon pieces from the marinade, shaking off any excess liquid. Dip each piece into the panko-cornstarch mixture, pressing lightly to adhere the coating to the salmon.

            Air Fry the Salmon Bites: Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the coated salmon bites in a single layer in the basket, making sure there’s space between each piece for even cooking. You may need to work in batches.

              Cook: Air fry the salmon bites at 400°F (200°C) for 8-10 minutes, or until they are crispy and golden brown, flipping halfway through the cooking time for even crispness.

                Serve: Once cooked, remove the salmon bites from the air fryer and garnish with sesame seeds and chopped green onions. Serve immediately with additional teriyaki sauce for dipping if desired.
