Air Fryer Cauliflower Tots

1 medium head of cauliflower (about 4 cups, riced)

1 cup shredded cheddar cheese

1/2 cup breadcrumbs (can use gluten-free if desired)

2 large eggs

1/4 cup green onions, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Olive oil spray (or another cooking spray)

Instructions
 

Rice the Cauliflower: Begin by removing the stems and leaves from the cauliflower. Cut it into florets and pulse in a food processor until it resembles coarse rice. Alternatively, you can grate the cauliflower using a box grater.

    Cook the Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl, cover it with a damp paper towel, and microwave on high for about 4-5 minutes, or until tender. Let it cool slightly, then use a clean kitchen towel to squeeze out any excess moisture.

      Mix the Ingredients: In a large mixing bowl, combine the cooked cauliflower, cheddar cheese, breadcrumbs, eggs, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until fully combined.

        Form the Tots: Take small portions of the mixture and shape them into bite-sized cylinder shapes, resembling tater tots. You should have about 20-24 tots.

          Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

            Air Fry the Tots: Lightly spray the air fryer basket with olive oil spray. Place the cauliflower tots in a single layer in the basket, ensuring they are not crowded. Lightly spray the tops with olive oil as well.

              Cook: Air fry the cauliflower tots for 12-15 minutes, flipping them halfway through, until they are golden brown and crispy.

                Serve: Remove the tots from the air fryer and let them cool slightly before serving. Enjoy them with your favorite dipping sauce, such as ranch or marinara!
