Ingredients

1 cup all-purpose flour

½ cup granulated sugar

½ cup unsweetened cocoa powder

1 tsp baking powder

¼ tsp salt

¾ cup milk

1 tsp vanilla extract

½ cup strawberries, pureed

½ cup whipped cream (store-bought or homemade)

Sprinkles for decoration

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini cupcake liners.

Mix Dry Ingredients: In a medium bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt until well combined.

Combine Wet Ingredients: In another bowl, mix the milk and vanilla extract. Slowly add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing.

Layering the Batter: Divide the batter evenly into three bowls. In the first bowl, mix in the pureed strawberries to make the strawberry layer. Leave the second bowl plain for the vanilla layer, and keep the third bowl as is for the chocolate layer.

Assemble Layers: Using a tablespoon, layer the batters into the prepared muffin tin: start with chocolate, then a spoonful of vanilla, followed by a top layer of the strawberry batter. Repeat for all muffins until the tin is filled.

Bake: Bake in the preheated oven for 8-10 minutes or until a toothpick inserted in the center comes out clean.

Cool Down: Allow the mini cakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Top with Whipped Cream: Once cool, pipe or dollop the whipped cream on top of each cake bite.

Decorate: Add sprinkles on top for a festive touch.
