Ingredients

1 pound fresh green beans, trimmed

1 cup white vinegar

1 cup water

3 cloves garlic, peeled and smashed

1 tablespoon dill seeds

1 teaspoon red pepper flakes (optional for heat)

1 tablespoon sugar

1 tablespoon salt

1/2 teaspoon black peppercorns

Fresh dill sprigs for garnish (optional)

Instructions

Blanch the Beans: Bring a pot of salted water to a boil. Add the green beans and blanch for 2 minutes. Remove and immediately plunge them into an ice bath to stop the cooking. Drain and set aside.

Prepare the Pickling Brine: In a medium saucepan, combine the white vinegar, water, garlic, dill seeds, red pepper flakes (if using), sugar, salt, and black peppercorns. Bring the mixture to a boil over medium heat, stirring until the sugar and salt are fully dissolved.

Pack the Jars: In a clean, sterilized jar or container, pack the blanched green beans vertically. Leave a little space at the top.

Add the Brine: Carefully pour the hot pickling brine over the green beans, ensuring they are fully submerged. Tap the jar gently to release any air bubbles trapped among the beans.

Cool and Store: Allow the jar to cool to room temperature, then seal with a lid and refrigerate. For the best flavor, let the beans marinate in the refrigerator for at least 24 hours before consuming. Garnish with fresh dill sprigs before serving, if desired.
