1 cup fresh jalapeño peppers (sliced into rings)

1 cup white vinegar

1 cup water

2 tablespoons granulated sugar

1 tablespoon salt

2 cloves garlic (sliced)

1 teaspoon black peppercorns

1 teaspoon dried oregano

Optional: 1-2 tablespoons honey for sweetness

Optional: 1 teaspoon mustard seeds for extra flavor

Sterilized jar for storage

Prepare the Peppers: Wear gloves and slice the jalapeño peppers into thin rings. Remove seeds for less heat if desired. Set aside.

    Make the Brine: In a non-reactive saucepan, combine the white vinegar, water, granulated sugar, and salt. Add the sliced garlic, black peppercorns, dried oregano, and mustard seeds (if using). Bring the mixture to a simmer over medium heat, stirring until the sugar and salt are dissolved.

      Pack the Jar: Place the prepared jalapeños tightly into the sterilized jar. You can layer them with garlic slices for extra flavor.

        Pour the Brine: Once the brine has reached a simmer, pour it hot over the jalapeños in the jar, ensuring the peppers are completely submerged. Leave about a half-inch of space at the top.

          Seal and Store: Wipe the rim of the jar with a clean, damp cloth to remove any residue. Secure the lid tightly on the jar. Let it cool to room temperature, then refrigerate.

            Enjoy: Let the jalapeños sit for a minimum of 24 hours before consuming to allow the flavors to meld. These treat jalapeños can be kept in the refrigerator for up to a month.
